Chapter 56: Peat Whiskey
Peated whisky, which has taken the world by storm with the popularity of single malt whisky.
Before that, only Islay locals would have a soft spot for peat.
Peated whiskey is a bit like civet coffee.
Before it was sought after by the European aristocracy, "cat poop coffee", fermented through the civet's intestines, was enough to discourage coffee lovers.
In fact, don't say that it is a "super high-end, super atmospheric, super high-grade" civet coffee, even if you take an ordinary cup of black coffee and give it to people who have never drunk coffee, they will definitely frown slightly because of the bitterness.
There are probably not many people who can fall in love with espresso without milk and sugar on the first bite of their lives.
But once you fall in love with it, you will feel that coffee with milk and sugar is so bland and tasteless.
The peated smell of whiskey is, in layman's terms, smoky.
The so-called peat whisky is not directly added to the whisky, but in the process of malting, the smoke produced by the incineration of the peat is used to smoke and dry the malt.
The severity of the peat flavor depends on the time of smoking and the amount of peat used in the smoking.
Smoking is a very common food processing process.
The number of people who have drunk peat whisky may not be the majority, but there are certainly not a few people who have eaten foods such as smoked salmon.
It's just that when you smoke food, you mostly use wood such as fruit wood, while smoked whiskey uses peat.
Where whiskey is used, peat.
Peat is different from place to place, and even in Islay, there are subtle differences in the amount of peat used in each winery.
Even in the same distillery, you can't find two pieces of peat that are exactly the same.
Avid fans of peated whiskey, it is common to measure the smokeiness of whiskey in terms of phenolic content.
THE HEAVIEST PEAT WHISKY, THE BRULEDI PEAT MONSTER, HAS A PHENOL CONTENT OF 169 PPM, AND THIS "FEELING OF PUTTING PEAT STRAIGHT IN YOUR MOUTH" IS DEFINITELY NOT ACCEPTABLE TO THE AVERAGE PEAT WHISKY ENTHUSIAST.
This isn't even the peat monster that most peat enthusiasts have heard of.
The Cornburks Peat Monster, which has a phenol content of 30 ppm, is the more widely known Peat Monster Whisky.
Looking at the value of phenolic content, we know that it is more than five times lower than that of the heaviest peat.
However, daring to call a monster such a name is enough to show that this is still not a peated whisky that ordinary people can accept.
Those who think that peated whiskey peat is better as heavy as possible can only be regarded as a "special fetish" for a few.
Just like drinking coffee, you must drink the most bitter in the world to call it a "special habit" to understand coffee.
Existence is certainly justified, but existence does not mean that most people can accept it.
A HIGHLY SOUGHT-AFTER, PEATED WHISKY LIKE THE ADMORE HAS A PHENOL CONTENT OF ONLY 12PPM.
There is also a peated whisky like Glenlivet, and the phenol content is directly reduced to less than 2PPM.
The fifth summer brought back to China this time, and the phenolic content of the whiskey evaluated by Lou Shang is about the same as that of Bowmore whiskey, between 25~30PPM.
This level of smoke is a favorite of Westwood Brunschweig, the last master brewer of the Brunschweig family.
The Brunschweig Winery didn't catch the good times.
The worldwide popularity of peaty whisky, considered a treasure by Islay, came after the closure of the Brunschweig distillery.
Before it was sought after by whisky gourmets all over the world, peat covered everything and made the whisky monolithic, an extremely rough mouthfeel.
Of course, we're talking about heavy peat whiskey.
Those that are just a little smoky, or like the Highland Knights, mix medium smoked malts with no peated smoke at all in a ratio of 1:4 and then start brewing, and the final product will definitely delight most whisky lovers.
Peat whisky is the most terroir-heavy whisky.
While people in other places still don't appreciate peat and single malt, many people in Islay don't drink single malt.
That's why, when malt and peat became popular, Islay had a faint sense of being the "centre of Scotch whisky".
The most amazing thing is that the terroir of Islay can assimilate everyone who comes to Islay.
Those of you who were once incomprehensible will naturally begin to understand this flavor when you set foot on the wild land of Islay and face the howling sea breeze.
One side of the water and soil to raise one side of the people, maybe it is such a magic.
Lou Shang and Shuai Ge land on Islay Island from the port of Allen.
This is the port where Lou Shang used to find old newspapers, and it is also the port where the Porter Allen Distillery is located.
The Porter Allen Distillery and the Brunschweig Distillery closed around the same time.
The whisky distilleries on Islay that closed in the early years of the 80s did not make up for the good times.
Porter Allen Winery is now part of Diageo, the world's largest wine conglomerate, a wine group that once threw an olive branch to Lou Shang, who had just dropped out of school.
Lou Shang was the talent they wanted to recruit five years ago, but at that time, they didn't expect that Lou Shang would be able to inherit the mantle of the wine country's divine tongue.
The fact that Lou Shang came to Islay Island was unknown to the people who begged the alliance.
But it's no secret to Islay's major wineries.
After all, Fan Lao didn't just ask the hotel people to take care of his beloved apprentices.
The last batch of whisky from the Potter Allen Distillery in the seventies and eighties of the last century is increasingly sought after as the secret recipe of the Johnnie Walker Blue Label, the top whisky of the Diageo Group, and the favorite of independent bottlers.
This popularity has made Diageo Group willing to invest 35 million pounds to restart Porter Allen, which has been closed for decades, and another relatively less legendary Brownla distillery.
If the brothers Westwood and Jerónimis Brunschweig were still alive, I wonder if they would regret their decision to offend the entire Scotch Whisky Association rather than sell the distillery.
You can't turn back the clock or fast forward, you can't even predict what will happen in the next five minutes, and how can you see what will happen in the next few decades.
After all, it's not often for a closed distillery to be able to restart and still keep its brand.
Porter Allen's luck is not only related to the quality of the winery's production, but also to the name of the winery itself.
Port Allen is a place name, Port means port, Allen is a transliteration, this is actually the place called Port Allen where Lou Shang and Shuai Ge are now ashore.
Port of Allen is one of the more prosperous areas of Islay, and the revival of such a winery named after the port is not a family legacy.
The whisky produced by the Brunschweig Distillery in the late seventies was the most popular now, decades ahead of other distilleries, which is why Mr. Westwood did not look down on the skills of other distilleries at the time.
It's the feeling of being high and widowed, lonely and seeking defeat.
The Brunschweig family has its own winemaking skills that have been passed down from generation to generation.
It has been inherited for 500 years without interruption.
The last master brewer of the Brunschweig family has been trained by his sons since they were three years old.
He has three sons and two daughters, and is considered the more "prolific" inheritor of the Brunschweig family.
Westwood didn't expect to be wiped out, and Yellowni Mith held on to his brother's belief that he would never let marketing whisky and swallow up the family distillery.
No matter how times have changed, the Brunschweig family has always insisted on making whisky in the most traditional way.
Manual turning, traditional cask fermentation tanks, even aged casks are rolled by hand, without the help of any modern tools.
The final result, of course, is a more tragic demise than being acquired.
But people are like this, they rarely give up all their persistence after they have already paid a terrible price for a thing.
This will make the original belief and persistence worthless.
After Lou Shang and Shuai Ge arrived at Port Allen, they were picked up by the people waiting at the docks to enter the Porter Allen Winery.
As the world's largest wine group, Diageo cannot be like the Brunschweig family, putting on a posture of being high, not afraid of deep alleys, and tradition above all else.
By taking advantage of the "fate" that he had recruited when Lou Shang was still lonely and did not inherit the mantle of the wine country, the marketing manager of the distillery hoped that "Brother Dumped" could recommend Porter Allen Whisky.
As literature and art can imagine, there is no reason why the marketing manager of the world's largest liquor group still turns a blind eye after seeing that wave of "divine operations" clearly.
Brunschweig whisky has not yet found the time to re-launch, but that certainly does not prevent the marketing managers of Diageo Group, who have a keen business acumen, from spotting the business opportunities.
Diageo Group also hopes to implant its own group's wine in the live broadcast room of the abandoned brother.
The kind of implantation that gives money, of course.
Diageo Group's annual advertising budget is astronomical.
Before leaving, Shuai Ge happily accepted Diageo Group's invitation to negotiate advertising placement, and chose the location on Islay.
Shuai Ge originally planned to come alone in two days.
Lou Shang suddenly became obsessed with "work".
If there is nothing to do, it will be cranky, and if it is cranky, it will be in a state of bull's horns.
He's got to keep himself busy.
Shuai Ge called the marketing manager when he was in Glasgow, and it just so happened that he had already come to Islay, so he simply advanced the whole trip.
What Lou Shang didn't expect was that waiting for them at the gate of the Porter Allen Distillery was not only the people of Diageo Group, but also the Xueyi brothers and sisters, and his sister Lou Xia.
Lou Shang, who originally wanted to use his work to temporarily forget his original intention of coming to Islay, was petrified directly at the door of the winery.
He hadn't figured out how to start recognizing Lou Xia.
Lou Shang patted the pocket of his clothes and confirmed again that he had put away the photo of his mother and that there was no possibility of it falling at any time.
Then he was completely petrified.
It's just a dozen meters apart.
No forward, no backwards.
"Master Lou Shang, is the cultural master so shocking that he cries ghosts and gods, and is so fast? The master wants to be an ambassador, and the ambassador just appeared, is there any surprise, is there any surprise?"
The master could not move, but the ambassador had no such problems at all.
Wenyi rushed over when he saw Lou Shang, and when he was three steps away, he fell directly and stumbled into Lou Shang's arms.
Lou Shang subconsciously reached out and helped Wenyi.
Luo Demon Girl patted her undulating 36D with palpitations: "Yiyi was really scared to death just now." ”
Seeing that Lou Shang didn't react at all, Wenyi was happy in his heart.
Ambassadors and ambassadors, now hand in hand.
Although Lou Shang grabbed the arm of literature and art, who said that pulling the arm is not hand in hand?
"The master is really good to the ambassador, otherwise Yiyi would have fallen on the head of this spiky and bad stone, and in that case, it would not be earth-shattering and first-class beauty. ”
Literature and art, which can be brilliant without sunshine, can definitely shine on the earth when encountering a little sunshine.
Literature and art probably didn't find it themselves, and the coquettish enchantress who used to be "full fire" only in the face of literature and the fifth summer now has an object that can be full of firepower.
Lou Shang completely straightened the literature and art before letting go of his arm.
Lou Shang pulled back his thoughts, withdrew the gaze that had always been on Lou Xia's face, and used the tranquility in the storm that can only be found in the eye of a typhoon, and asked, "Cultural Ambassador, are you okay?"
"With the protection of the elder brother, of course the ambassador's sister is fine. "Literary laughter is like the morning air, the rainbow after the rain, and the refreshing beauty.
"Sister?" Lou Shang seemed to only hear Wenyi say two words.
Literature and Art realized that he had said the wrong thing.
She knew that Brother Dumped was looking for her mother and sister, but she didn't open any pot.
The coquettish enchantress began to wonder what kind of coquettish would be more effective.
Before she could figure it out, someone came to the rescue.
Literature and the Fifth Summer both came to see if there was anything wrong with literature and art.
Lou Shang's whole person was at a loss, and he touched the pocket where the photo was placed again, although he was very sure that his pocket could not leak, but there was still a feeling of unease.
Shuai Ge patted Lou Shang's shoulder, comforted Lou Shang's emotions and asked Wenwen: "Why did Mr. Wen come to Islay Island?"
"The Porter Allen Distillery is going to restart, and I'm going to talk to them about the general agent in Greater China. ”
Literature is first and foremost accompanied by literature and art.
Literature and art said that he would return to Scotland immediately, and literature had no way not to worry.
It just so happened that literature and art were going to return to China for development, and there were many more, and when he hurried back in a hurry, he didn't bring anything back, and he just happened to be a coolie for his sister.
This is his "mission" as the elder brother of the nation.
As the chairman and general manager of Culture & Wine, since Literature has come, he must enrich his trip to Scotland.
