"Both Burgundy Pinot Noir and Chardonnay are grown here, but they are a little more delicate, so Pinot Noir is often blended with local red grape varieties for a fuller body and structure. β
The most prevalent red grape variety cultivated in the Jura is Pussa, as it is called in the Albois region, which produces a light wine, very close to rosΓ© wines, light and soft on the palate, with sweet fruity aromas, and Trousso, another red grape variety, characterized by a darker color, strong tannins, a rugged taste with animal and game aromas, and the disadvantage of a warmer climate to ripen.

"We will improve the taste according to the feedback given to us by consumers, see what kind of flavor consumers like, we will produce what kind of flavor, to cater to the market, consumers are God, we also have to adjust to the needs of consumers. Paul said.

"The method of production of straw wine is to use white grapes from among the grape varieties, and the grapes are placed on straw piles with intact and undamaged grapes, or hung to dry for 2-3 months. β
"After the natural wind has deprived it of moisture and increased the sugar content of the grapes, it is pressed and vinified to obtain a sweet white wine with a high residual sugar content and high alcohol content, which is usually bottled after two years of oak barrel cultivation, because the grapes with high ripeness must be selected and the dried grapes do not extract much juice. β
"Rice wine is made in a similar way to sherry, when the Savangne grapes are very ripe, then fermented in old Burgundy oak barrels, cultured and stored for more than 6 years, without adding barrels, during which the wine slowly volatilizes and oxidizes. β
"The main function of the upper membrane is to protect the wine from excessive oxidation, it needs to be left for several years to be made, the color is golden, with a unique aroma of beeswax, walnut and nuts, the taste is thick and round, the stone fruit has an extremely long aftertaste, and the aging ability is extremely strong, up to several decades. β
The Jura region also produces outstanding Jura sparkling wines, made using traditional methods, and some of the high-quality sparkling wines have a very similar flavour to Champagne.
There is also a Jura liqueur, which is a mixture of unfermented sweet grape juice and brandy distilled from grape pomace, resulting in a liqueur that is sweet and rich in taste and can be drunk as an aperitif.
