When I was a child, the earthen stove at home burned firewood sticks, leftover bean straw from sheep, and fallen branches from trees, and I unfortunately became a husband, or more specifically, a fire-burner.
My sister is the head chef, and she cooks at noon every day, and as for the ingredients, most of them are fresh seasonal vegetables, and occasionally they are stained with meat.
In early summer, new potatoes have not yet grown in the field, so the family usually buys celery, cauliflower, peppers, and onions in the market...... , correspondingly, there are celery fried pork slices, vegetarian fried cauliflower, eggs and chili, green onion fried pork liver......
Today I'm going to talk about side dishes, and I don't really understand the definition of side dishes in food festivals. Therefore, it is only regarded as a companion dish, and the amount is less than more than the main dish, which only plays the role of seasoning.
For example, stir-fry a plate of cauliflower with a little celery in it, and the celery can be used as a side dish. In Chinese food culture, there are some things that are in conflict with each other and cannot be eaten together, otherwise there will be chemical changes inside, such as muscle soreness and stomach trauma in the light, and poisoning and death in the heavy, which are all things that have been passed down from generation to generation.
Let's talk about the combination of cauliflower and celery, to say that the celery is fried alone, and then add a little shredded meat or meat slices to it, of course, the meat here is basically pork (the kind of pork belly), the taste is very delicious, under the magical chemical action, celery can fry the pork just right, and it smells mouthful.
But when I was a child, there was not so much meat to eat at home, so celery was not accompanied by meat, and the single fried celery looked very monotonous, and the verdant dish was a little more lonely. So under the hands of my sister, celery ushered in its new partner - cauliflower. Celery is cooked with cauliflower, at least the color is not so monotonous, and the taste is okay.
As for a dish, the amount of celery and cauliflower determines who is the main dish and who is the side dish. Generally speaking, for the two of us, the main course is not welcome, and the corresponding side dish tastes more fragrant and attractive, which also leads to the side dish becoming the object of contention between the two of us.
It's strange to say, in the same way, in a dish, if there is more cauliflower, then we will compete for celery, and if there is more celery, we will eat cauliflower first.
I sometimes wonder if the two dishes were the same amount, and what would we choose, I guess I would lose interest and eat whatever I got with my chopsticks. But where does the same amount come from, there will always be more or less, even if a plate of vegetables is fried with celery, there are differences in roots, stems and leaves, and so on......
In a small life, how can the truth be counted, and the truth of life is inadvertently here. As for saying that it should be clearly expressed, everyone has their own opinion, why should they say it, everyone thinks of what they think, and the truth is the same.
