Verse 54: A blend of Sauvignon Blanc and Viognier

() Appropriate banter can reduce the stress of work.

This year, thanks to the early spring, the grapes ripen earlier than usual. Although it is not yet the season for large-scale grape harvesting, there are many grapes that can't help but ripen early in the 80 acres of vineyards.

Six grape varieties are planted: Cabernet Sauvignon, Pinot Noir, Chardonnay, Zinfandelle, Sauvignon Blanc and a small amount of Viognier.

The early-ripening grapes are limited after all, and it is already 10 p.m. Steve, they didn't mean to get off work yet, Ye Mo couldn't help but ask, "What kind of wine are you making?" ”

"Fruity wine."

Ye Mo glanced at the grapes in the cleaning pool, and couldn't help but jump with his eyes: "Fruity wine?" ”

"Uh, yes, fruity wine." Steve shifted his body, and with an unnatural smile on his face, he wanted to block Ye Mo's sight.

"Please, I've seen that. A pool of Viognier grapes...... Is this to make fruity wines? ”

"Hehe......"

The reason why Ye Mo was distressed was because this was the old vine Viognier.

This is an extremely difficult grape variety to grow, Viognier was once one of the most common grapes on the European continent, but in the 60s of the last century it was almost endangered, imagine that all of Europe was left at that time only 8 acres of Viognier vineyards on the Norn River.

Today's Viogniers have only been widely introduced since the 90s, and there are very few real vine Viognier vines.

The other vines at Park Gor are measured in acres, but Viognier is counted in 'pieces'. Once planted with 15 acres of Viognier vines, only 113 remain.

The most appealing thing about Viognier is its powerful complex aroma. The aroma substance is the same as Gewürztraminer and musk, which is a terpene substance, and the wine made by Viognier due to its low acidity is not suitable for long-term storage, and the aroma will gradually disappear within 3 years. Therefore, it is common to blend wines, and in California winemakers have tried blends with grape varieties such as Chardonnay, Chenin Blanc, and Pigeon White, and the results usually do not disappoint.

In addition to the signature Cabernet Sauvignon star red wine, the most attractive thing is this 113 old vine Viognier. However, because of the production, the white wine blended with it is even rarer, and it is generally snapped up by the members of the winery after brewing, and it is not even possible to store it by itself.

Viognier is also very strict about the environment, preferring to stand on poor, dry and rocky soils, and is not resistant to many pests and diseases against grapes. And its production is very scarce, even in the main growing region of France, the Rhône Valley, which is very suitable for it. It is precisely because of the small production volume and the exclusive aroma of the top quality that a single bottle of Viognier wine is hard to find on the international market, and the price is high.

Park Song Winery was famous for its five-star reputation, but it maintained the number of members of the winery because of the 113 old vine Viognier.

Ye Mo had a toothache on his face. Although it was previously decided that only Pate and Thomson were left as members of the winery, they could use the Viogniers on the old vine trees to make small, fresh and fruity wines......

Wouldn't this be too extravagant, too losing.

Fruity wine is a wine that is based on wine and is fermented a second time by adding other fruit juices after the initial fermentation.

The secondary fermentation generally does not convert all the sugars of the fruity juice into wine, so the final wine will be sweeter, and the alcohol content is generally around 8-10 degrees, which is suitable for the elderly, ladies and parties. Fruity wines can have different fruits, and the resulting wines can also have different colors and flavors.

Overall, this is a popular red wine that tends not to be too expensive. Moreover, Château Park Ge is not good at this type of wine.

"Squeak." The little thing of gold bars was afraid that the world would not be chaotic, and pointed at Steve and shouted.

Ye Mo flicked the little thing's brain seeds with his fingers and reprimanded, "Be quiet for me." ”

Steve smiled wryly and said, "Okay, I'm trying a new fruity wine." It has both the richness of white wine and the heaviness of red wine......"

"How is this possible!"

"Of course it is. In fact, the idea has been in my head for decades. Steve said with a little bit of confidence.

Ten years of vine farming, hearing and seeing, Ye Mo is not an idiot for wine. White wine and red wine are completely different winemaking techniques and completely different flavors.

Red wine must be made from red grapes, which can be grapes with red skin and white flesh, or grapes with red skin and flesh. The red color of the wine comes from the red pigment in the grape skins, and no synthetic pigments can be used.

White wines can be easily made from white grapes or from the juice of red grapes with the skins removed, without the need for maceration of the juice and skins, but with the juice fermented separately. The grapes are sorted and destemmed before being pressed, the juice is separated from the skins and clarified, then fermented, aged and processed at low temperatures to make a dry white wine.

Two completely different wines, red wines fermented with skins. White wine is fermented separately using fruit juices.

Both are grapes, and the biggest difference between skinned and unskinned grapes is the amount of tannins in them.

Because the tannins are abundant in the skins, white wines have a very low tannin content, a taste that is not astringent, and a refreshing smell.

Red wine is different, in high-end red wine, tannins are always its soul.

The main role of tannins is to create the 'skeleton' of the wine. The structure of the wine is stable, firm and full. It effectively polymerizes and stabilizes pigment substances, giving wines a perfect and vibrant color. During fermentation, it also reacts with other substances in the wine to form new substances that add complexity to the wine. Wines with insufficient tannins are stunted and are usually light, weak and tasteless.

The current international trend is that more and more people prefer heavy wines. It is not difficult to make a heavy body in itself, as long as a few extra pieces of oak are thrown into the barrel during fermentation, but such a wine has a strong oak flavor. Therefore, whether or not you can make heavy wine depends on the natural conditions of the grapes.

You can't smell or taste the tannins, you can only feel it, and it will bring a sense of astringency to your mouth. The right amount of astringency in the mouth will make the red wine 'heavy', which is also an important indicator of how good a red wine is.

"To add to the heaviness of the wine, it is necessary to consume enough tannins. But as a result, the wine inevitably has some tannin astringency. The freshness of white wine is due to the lower tannin content...... How to strike a balance between freshness and heaviness? Ye Mo asked.

"So, I'm making fruity wines." Steve spreads his hands and says, "The first fermentation takes place in oak barrels in the same way as red wines, and more tannins are ingested during the fermentation process, which makes the wine fuller. In order to reduce the astringency of the tannins, the second fermentation with the addition of fruit juice is carried out in glass bottles......"

Hearing Steve's explanation, Ye Mo was not at ease, and said, "But...... If it's so nondescript, will it be reduced to a third-rate? ”

Steve looked at Ye Mo with a look of 'you know very well' and said, "So, I chose the sour Sauvignon Blanc and the aromatic Viognier for the blend. The slightly green Sauvignon Blanc contains a very high acid content, and the polymerization of tannins should also have the potential to age after being mixed with fruit juice for a second fermentation. Of course, the final result is not yet expected...... It can only be handed over to time verification. ”

"But this golden squirrel of yours ruined my handpicked Sauvignon Blanc ......"
