It's a small stream, and it doesn't have much effect on the cellar. But in the decades that followed, the Napa Valley government organized the digging of a pond for irrigation in the No. 3 appellation, bringing in a new source of water, now known as Karls Lake.
Before 1940, Park Ge Estate was quite famous in Napa Valley. But after that, the lake gradually formed, and the infiltrating groundwater changed the environment of the cellar. The cellar has become colder and damper, and it is no longer functional.
The cellar has a constant temperature of 8.5°C, which does not exceed 9°C in summer and does not fall below 8°C in the coldest part of winter. The humidity is relatively high, reaching 85 percent. This environment is not conducive to the aging of the wine and can make it take a long time to mature.
But when it came to Steve's master's generation, they regarded it as a treasure. By chance, white wines made from Viognier grapes seemed to be well adapted to the environment. The Viognier grapes are extremely fragrant, with intense aromas of apricots, peaches and other fruits. Fermentation in oak barrels also produces flavors such as vanilla, sweet wood, and toasting......
Viognier wines have an unforgettable aroma, but unfortunately the acidity is too low to last long. But here, the natural low temperature and humidity can give it more time to grow, so that the wine is further plumped and the aroma is further refined. After blending, it can also increase its shelf life.
Unfortunately, Viognier's production is so small that Château Paco now has only 113 pieces left. Even in blends, less than 200 bottles of Viognier wine are produced each year. Every year, Viognier wines are booked by the winery members before they are bottled. No more than 50 bottles are kept each year, and these wines are placed in this ancient cellar to mature before being auctioned......
Along the dark, damp passageway, the wine racks on both sides were dusty. In the middle of the cellar is a large space in the shape of a barrel, which is even darker.
Wine cellars where wine is stored are generally very dark, especially for white and sparkling wines. If it is constantly exposed to light, the wine will develop a light taste, which is a taste that is incompatible with the wine itself. Generally speaking, red wine bought in the supermarket has a light smell, and in many cases, it has a rubbery taste, which makes people can't swallow it.
The round walls are densely packed with wines. Most of the wines are fully ripe, and the low temperature environment can slow down the aging rate of the wine. There are also pillars erected in the cellar, which are dim and unclear, and eerie and cold, like the castle lair depicted in the movie.

With the exception of the Viognier blend, which is not introduced, the average age of the other wines is over 13 years old. Most of them are ripe wines, and the rest are aging.
In addition to the taste, what is more important is the feelings. Although Park Song Winery has a history of 100 years, it really has no feelings to speak of. For one, it is only slightly known in the Napa Valley, and by the way, it is now well-known in the United States. However, that's not what wine should be known for.
Angela was not interested in wines that had passed the peak of aging, but looked at wines that were in their prime. There are more than 3,000 bottles of wine at the peak of aging, ranging from the cheapest to $55 a bottle and the most expensive to $288.
