The other is fermentation equipment.

Fermentation equipment should be able to control temperature, easy to wash, drain, and have good ventilation.

It should be cleaned before use and disinfected with SO2 or formaldehyde fumigation.

The fermentation vessel can also be made for both fermentation and wine storage, which requires no leakage, can be sealed, and does not play a chemical role with the liquor.

There are fermentation barrels, fermentation tanks, and special fermentation equipment, such as rotary fermentation tanks, automatic continuous circulation fermentation tanks, etc.

Fruit juice fermentation is divided into main fermentation and post-fermentation.

The fruit wine blended in the finished product is mainly blended and adjusted.

Blending is generally to select a raw liquor with close quality to the standard as the base liquor, select one or several other liquors as the blended liquor according to its shortcomings, add a certain proportion and then conduct sensory and chemical analysis to determine the proportion.

The adjustment is mainly based on alcohol content, sugar, acid and other indicators.

Finally, filtration, sterilization, and bottling.

Filtration includes diatomaceous earth filtration, thin plate filtration, microporous membrane filtration, etc.

Fruit wine is often packaged in glass bottles.

When bottling, the empty bottle is soaked in 2-4% lye at a temperature above 50 °C, then cleaned, drained and sterilized.

The wine can be pasteurized before being bottled hot or cold.

Fruit wines with low alcohol content should also be sterilized after bottling.
