The pressing is carried out in two stages, the first time is gradually pressurized, as much as possible to press out the juice from the pulp, the quality is slightly worse, it should be brewed separately, and it can also be combined with artesian juice.

Sulfur dioxide treatment, the role of sulfur dioxide in fruit wine is sterilization, clarification, anti-oxidation, acidification, dissolution of pigments and tannins, reduction, and improvement of the flavor of wine.
Sulfur dioxide is used to produce gases such as sulfur dioxide and sulfite, the former can be directly introduced through pipes, and the latter needs to be dissolved in water and added.

There are two types of adjustments to the juice.

Second, the adjustment of acids.

Dry wine is easy to be 0.6%-0.8%, sweet wine 0.8%-1%, generally pH greater than 3.6 or titratable acid less than 0.65%, the juice should be acidified.
