Of course, more than 1,400 years ago, there was no distilled liquor in China, and the "Fenqing" and "dry brewing" mentioned in historical materials may all be rice wines.

After the Song Dynasty, due to the progress of alchemy technology, distillation equipment was invented for the first time in China. It is recorded in "Fenjiuqu" [2] that "the new well on the side of the Shenming Pavilion is slightly heavier than the crab roe", and the annotation reads: "The water in the Shenming Pavilion is excellent, and the liquor is made with it, and the weight of the two catties is unique".

At the end of the Ming Dynasty, Mr. Fu Shan, a patriotic poet, calligrapher and medical scientist, had personally inscribed the four big characters of "to make flowers" for the ancient well of Shenming Pavilion.

To make famous wine, there must be a stunt. "Zhou Li" recorded the six methods of winemaking, namely: "rice must be together, koji medicine must be timely, Zhan Chi must be clean, water spring must be fragrant, pottery is good, fire is together", this is the essence of rice wine brewing method.

At the end of the Ming Dynasty, Li Zicheng, the leader of the peasant uprising, marched into Beijing, and when he passed through Xinghua Village, he drank Fenjiu and praised it as "perfect".

In the 96 chapters of the book "Mirror Flowers", Li Ruzhen of the Qing Dynasty listed more than 50 kinds of well-known liquors in the country at that time, among which Tui Fen liquor was the first, and there were also many records of drinking Fen liquor in "Two Autumn Rain Nunnery" and "Qing Barnyard Banknotes".
