Volume 1 The First Cry Chapter 3 Suitable for all ages

The next visit to Nakajima Saburosuke is also a member of the royal family, but one level higher than Nakajima is the genealogy of the royal family, and the Nakajima family has served as the Uraga commission for generations, and is a distant relative of Naohide's neighbor Nakajima Kuroo.

The Uraga Office was established in the fifth year of the Imperial Insurance, and was one of the Engoku Offices, and the port where it was located was the future Yokosuka Port, which guarded the exit of Edo Bay, and was responsible for inspecting all ships and goods entering and leaving Edo Bay. It was established in 1720 (5 years of insurance) and was responsible for inspecting ships and their cargo entering and leaving Edo, and was also in charge of the civil affairs of the nearby shogunate, with a quota of one or two people, 12 subordinates, and 50 people.

Saburosuke Nakajima's reputation is "clean and white", which is simply law-abiding and unsociable. Historically, Nakajima was an enterprising technocrat: ten years later, after the incident of the visit of the black ships, the shogunate reformed the ship administration, and without the guidance of foreigners, Nakajima led and Nakahama Manjiro succeeded in building the 550-ton Western-style sailing ship Phoenix Maru, which was the first modern ship in the history of Fuso.

Nakajima suffers from asthma, which is a chronic disease, and it is not easy to cure it, but there are many ways to alleviate it. Neighbor Kuroo Nakajima took Naohide to meet Nakajima, and Naohide gave him a mask made of multi-layered cotton cloth and provided acupuncture therapy, which greatly relieved Nakajima's asthma.

Naohide visited the Uraga office many times under the pretext of visiting Nakajima, bringing a lot of gifts and food, and befriending many middle- and lower-ranking samurai at the office.

Naohide also invested in Nakajima Hiro's younger brother, Kijiro Nakajima, who opened a restaurant in Uraga. The restaurant is a hidden private restaurant located in the corner, which doubles as a "bribe house" fast food delivery business.

At this time, the lunch of the middle and lower class samurai was very simple, and many of them consisted of pickles (pickles), rice, and miso soup, sometimes with a little dried herring roe soaked in water or herring, or a little shellfish. All the ships in Edo Bay inspected by the Uraga Commission were so heavy that the food without oil and water could not meet the body's needs.

At this time, the cuisine is already richer, but the food is very strange:

One is to pursue a vegetarian diet. During the Edo Shogunate, Buddhism flourished. The fifth-generation general Tokugawa Tsunayoshi was particularly fond of kittens and puppies in order to seek his son, and he felt that the world was declining, so he simply issued a "mercy order" to strictly prohibit killing. As a result, over the years, a lot of meat can not be eaten, domestic pigs, cattle, horses, dogs, chickens can not be eaten, sheep at this time Fuso is not available, goats are only in the south of Kyushu Island, meat is very tragic, common can eat only ducks, rabbits. In addition, due to Buddhist factors, irritating vegetables should not be eaten, and onions, ginger, garlic, seaweed, natto, etc. should not be eaten. Fruits can only be eaten such as watermelon, pear, persimmon, orange, plum, etc., and other fruits can be used as food decoration but cannot be eaten. (In the early days of Western countries, many fruits were not eaten but decorated on the table in aristocratic societies, which shows the commonality of human culture.) )

Of course, this was something that ministers, middle- and upper-class samurai, high-ranking monks, and some wealthy merchants who were vassal and elegant, and lower-class samurai, merchants, townspeople, and peasants did not pay much attention to it, but because of the low level of economy, there were some things that they could not afford to eat.

Second, pay attention to a lot. In order to be elegant and show their identity, the upper class people desperately divided the food into three, six, nine and so on, and the high-class food includes the famous five treasures of "three birds and two fish" - crane, lark, grebe (black water chicken), sea bream, anglerfish, abalone, tofu, which is regarded as a mascot, puffer fish that was banned by the shogunate, bean sprouts, carp and squid that are "cranes among birds, carp in the river, and sea bream", and squid, many of which are rare and uncommon foods. In short, good food tastes good, and it is either good looking or scarce.

Of course, Fuso cuisine is claimed to be different from Chinese cuisine in oil packets, which is a water-wrapped dish, and sashimi, stew, and grilled dishes are popular without a wok, and many common foods cannot be made rich and delicious. And because of the Buddhist factor, he hates blood and taboos eating red meat.

Sushi, eel rice, tempura, oden, and soba noodles, which were popular among the common people of Edo, all of them, except for soba noodles, included tuna (tuna), sweet potatoes, potatoes, etc., which were considered "very inferior and humiliating to eat."

Because of the hierarchical system, the lower-class samurai could not put down their status to eat these "inferior foods" like commoners, but many samurai had to keep exercising and had heavy work, and the "thrift decree" issued by the shogunate every once in a while cut the samurai's income, so the diet of the middle and lower-class samurai was very tragic - the expensive ones could not afford to eat, and the cheap ones were embarrassed to eat.

Kijiro Nakajima's ryotei bento is basically half sold and half given away to the samurai of the court, and the "inferior food" inside is exquisitely made, delicious, and expensive, and the food is cheap, so it is naturally welcomed by the government with the power and concentricity. At the same time, because Ryotei is located in Uraga and is convenient for dining, and because of the familiarity with the samurai, the location is secret, and the entry and exit are unknown, many merchants like to hold banquets for the samurai of the shosho.

Through Saburosuke Nakajima and Kijiro, Naohide was able to get into the relationship with Uraga Commission, which was very important for Naohide's future planning.

As for Neijima Xiang, Naohide knew that he was born in Edo this year in a family of lower-ranking samurai of the Anchu Domain, but after looking for a long time and not finding it, he had to give up.

So far, Naohide has completed three major tasks: helping neighbors, hugging his thighs, and establishing contacts, and at the same time, Naohide has also obtained a start-up fund for his business through his cooperation with Kinokuniya Toshihachi.

Beginning Naoxiu transferred the production technology of the washboard to Liba with a small judgment of forty dollars, and Liba also sold the washboard prosperously. With the backing of the Oshimoto Oguri family, relying on the Edo 10 Group Ask House and the Osaka 24 Group Ask House, he won most of the market share in Edo and nearly half of the market share in Osaka in one fell swoop.

In fact, Liba didn't make a lot of money in the washboard business, and Naohide estimated that after removing production costs, labor costs and marketing expenses, Liba earned a maximum of 1,000 days to guarantee a small judgment. Through this sale, Toshihachi made a name for himself as Kinokuniya, and he also established his business contacts and credit.

Because Rihachi's Kii Kuniya is mainly engaged in oil and sugar, and also makes groceries, so in order to make more money, Naohide took out the goods of small sesame oil and mahjong.

The Fuso diet is mainly light in taste, but in fact, it pays attention to the original taste of the ingredients, and does not exclude some condiments, such as the pungent condiment Fuso wasabi-wasabi, which is also very popular.

Sesame oil has a strong fragrance and is used for cold dishes, stews, and soups. The most popular cooking oil in Fuso in later generations was sesame oil.

Sesame oil is called "sesame oil" in Fuso, and the name of sesame indicates that sesame seeds are not native to Fuso.

Legend has it that Tokugawa Ieyasu, the first shogun of the Edo shogunate, died in the spring of 1616 after eating tempura fried sea bream with sesame seeds. In 1749, when Kandai Kamio Haruo raised taxes in the shogunate, he also compared farmers to sesame seeds: "The more you squeeze the more oil comes out", which shows that sesame oil has long been spread in Fuso.

Generally speaking, black sesame seeds, which contain a lot of fat, protein, sugars, vitamins and other nutrients, are eaten, and white sesame seeds, which are high in oil, are used to extract oil.

Sesame oil and sesame oil are strictly not the same thing:

Sesame seeds are directly pressed to produce oil without high-temperature frying, and the taste is relatively light, and it is called ordinary sesame oil in China.

The unique ingredients in sesame seeds are processed by the high-temperature stir-fry process to produce substances with special fragrance, resulting in sesame oil having the same fragrance, which is different from various other edible vegetable oils, and is called sesame oil in China.

In Fuso, unbaked, directly extracted white sesame oil is called Taibai sesame oil, and the sesame oil that is squeezed after low-temperature roasting is called golden sesame oil or taixiang sesame oil. The two are analogous to ordinary sesame oil and sesame oil in China. Both retain the unique aroma of sesame oil, but are not so strong that they overshadow the original flavor of the ingredients. Among them, Taibai sesame oil is lighter in color, softer in taste, and lighter in texture; The sesame oil is slightly darker in color, more mellow in taste, and more viscous in texture, both of which have their own strengths.

The price of sesame oil is very expensive at this time, but many famous operators of Edo's gourmet "tempura" use Taibai sesame oil, Taixiang sesame oil, or a mixture of both, so the demand is not low.

Naoxiu learned that at this time, the production of Fuso's sesame oil was mainly the direct pressing method, and the "water substitution method" did not appear. The traditional sesame oil prepared by direct pressing method has a large loss of nutrients and active substances, and the oil yield is low, and the oil quality is not very good, but the "water substitution method" overcomes these shortcomings, and the sesame oil prepared is crystal clear in appearance, and the color, aroma and taste are fresh for a long time.

The "water substitution method" first selects and washes the sesame seeds, then drains them, and then frries the sesame seeds, and through the grinding of the stone mill, the sauce blank is formed, and a certain proportion of high-quality drinking water is poured into the sauce blank, and the oil is replaced from the sauce blank by using the different specific gravity of oil and water.

There are three main advantages of the "water substitution method":

1. When washing and draining, sesame seeds are cultivated into sesame embryos to promote the production of nutrients such as sesamol, sesamol, and sesamolin that are beneficial to the human body.

2. Stone grinding and grinding: The stone grinding process is low temperature and low pressure, and the process temperature is only 60-65 °C, which will not destroy the aromatic substances and functional nutrients in the sesame oil.

3. Water substitution method for oil extraction: the oil embryo separation is easily realized by using high-quality drinking water water, and there is no need to add any chemical solvent in the oil extraction process, so there is no chemical solvent residue. At the same time, the water substitution production process makes the heavy metals harmful to the human body precipitate out of the sesame oil because of the specific weight, so the sesame oil prepared by this method is very healthy.

The above advantages can not be clearly explained by the scientific level and Liba at this time, and it can only be inferred that this is an ancient Chinese recipe, which has always been a secret tradition, and it is not easy for me to see it in an ancient book in Kuanyong Temple.

Watching the process of grinding sesame oil made by the neighbors in the jujube house by Zhixiu on the spot, Li Ba was pleasantly surprised, because only unique goods can be sold for a large price, as for whether the taste is good or not, but now the taste is good, it is better to sell money!

Another surprise was the bamboo mahjong provided by Naohide.

According to the research of Fuso scholars, the mahjong of Fuso was brought to Fuso from China in 1909 by a Fuso English teacher named Hikosaku Nagawa. Later, it became a popular entertainment for all ages. According to statistics, there are more than 20 million people who like to play mahjong in modern Fuso, and there are about 15,000 mahjong halls in the country.

There is a saying that mahjong was introduced to Fusang during the Tang Dynasty. In fact, modern mahjong was formed in the late Qing Dynasty, so what was introduced to Fusang in the Tang Dynasty was not modern mahjong, but leaf play. The invention of the leaf opera was made by the famous astronomer Zhang Sui (a group of monks) in the Tang Dynasty for Xuanzong to play with Gong'e. Because the card is only the size of a leaf, it is called a leaf play. Later, the people passed on, the literati and bachelors flocked to it, and soon spread, the earliest was a card game, called the leaf play, there were forty cards, divided into 100,000 guan, 10,000 guan, Suozi, Wen Qian four suits, and later evolved into the name card and mahjong.

The mahjong recommended by Zhixiu to Liba is the Fusang mahjong of later generations, four pieces of Wan, cake, and Suo from one to nine, and four pieces of white hair in the southeast and northwest, a total of 136 pieces, which is the same as the northern mahjong of China. The rules are the same as those of Fuso Mahjong in later generations, and they are also similar to the principles of Chinese mahjong.

Northern China Mahjong is a deck of 136 cards. Southern mahjong is generally 144 tiles, with the addition of spring, summer, autumn, winter and plum, bamboo, orchid, chrysanthemum eight flower tiles. There are also some local mahjong, plus 1 card each of Cornucopia, God of Wealth, Mouse, and Cat, and 4 cards of Wild, for a total of 152 cards.

The class repression in Fuso has been severe from ancient times to the present, so there are many addicted gamblers, and they all hope to get rich overnight and change their lives. As long as you look at the popularity of Fusang throughout the country and the fact that there are pachinko houses everywhere in the streets and alleys, it is clear that many Fuso people are addicted to gambling.

At this time, the popular gambling equipment in Fuso was represented by dice and flower cards, which were divided into 11 categories, such as literature and art, bow and arrow, lottery, animals, sports, dice, and cards.

There are different opinions about when Fuso gambling originated. It is generally believed that it originated from divination, divine judgment, and competition, and according to this view, Fuso's gambling can be said to have a long and enduring history. What's more, there is a wide range of participants. According to the later Meiji strange man Miyatake's record in the "History of Gambling", gambling since ancient times, "is not only a hobby of lowly savages, but also popular in the upper and middle class society, ancient and modern things, evenly distributed, ministers, hundreds of officials, scholars, literati, rich and powerful indulge in evil plays are also numerous." And "monks are no exception, and they are also fond of cards and other kinds of gambling." "The shogunate has repeatedly banned it.

But mahjong can be used as a gambling device is also an excellent entertainment tool, moderate duration, can be long or short, easy to play but a variety of cards, the number of participants is not much, suitable for emotional exchanges, there is confrontation and cooperation in the game process, and contains a lot of luck component, more fair.

After playing a few games of mahjong, he was keenly aware that this was a treasure that was appreciated by both men and women, young and old.

In the end, Naohide licensed the exclusive technology to Kinokuniya of Rihachi at the price of 500 days each for mahjong and small grinding sesame oil, a total of 1,000 taels of small jumin, and at the same time, the Zaoya production team composed of neighbors also served as a member of Rihachi's suppliers. The payment is divided into three parts, the down payment is 400 small deposits, 300 after one year, and the last 300 in the second year, and the payment is settled separately.

In fact, the small amount of 1,000 taels was not small for Kinokuniya at that time. In the case of the shogunate's low-ranking samurai Tongxin, the annual income is about 20 to 30 days of small judgments, but the annual income of Saburosuke Nakajima is about 200 days. In terms of the prospect of mahjong and small grinding sesame oil, mahjong is easy to be imitated, but the sales volume is large, and the small grinding sesame oil is not easy to be imitated, and the long-term profit is more, no matter which one, as long as the patient management is bigger and stronger, the long-term profit is based on 10,000 small judgments. At this time, Naohide was a doctor for the shogun Shiko, so at this time, Rihachi did not dare to cross the river and demolish the bridge and think again.

And with the 400 small judgment for this down payment, plus the share of the jujube house group such as treatment and medicine sales before, and the resale between Ishida Village of Kaneiji Temple, after deducting the expenses of this period, Naoxiu has about 600 days of small judgment in his hand, and the initial cost of the study tour is enough, so Naoxiu made a good explanation and arranged a farewell banquet, ready to set off for a westward study tour.

Thinking that he had finally officially thrown himself into the turbulent era at the end of the Bakugawa era, Naoxiu was full of excitement and unsettling spirits.
