The second step is to steam the rice. A vat of rice wine usually cooks 20 catties of rice. The rice should be cooked thoroughly, neither hard nor soft.

The third step is to ferment in vats. First, the rice is "added" from the iron pot and placed in a "basket" made of bamboo to dissipate the heat, and when you feel the right temperature with your hands, sprinkle the pre-"hammered" koji. After that, the evenly mixed rice is placed in a clay pot for fermentation. Fermentation period: 15 days in winter; About 10 days in summer.

The fourth step is to retort and boil wine. The retort is a barrel-shaped, with a diameter of 60 cm at the top and 80 cm at the bottom, and is made entirely of wooden blocks. There are two bamboo hoops on the outside of the retort. There is a "trough board" inside the retort. The "trough board" is about 15 centimeters wide and 70 centimeters long. The "trough board" is placed high at one end and the other at low in the retort. The lower half of the retort has a spout, and the end of the "trough plate" comes out of the spout. Then use a bamboo pipe to connect the wine flowing from the "wine trough plate" to the clay vat where the wine is filled.

To pretend to boil wine, you must first build a large stove. A large iron pot with a diameter of 90 cm is placed on the large stove. First, pour the fermented sake lees into the pot. Then put the retort in the shape of a garden bucket on the pot. At this time, add water to the pot. It is better to add water until the lees are parallel to the bottom of the retort. After adding water, place the "trough plate". After that, an iron pot is placed on the upper mouth of the retort, commonly known as the "heavenly pot". The joint between the lower mouth of the retort and the iron pot is sealed with rice bran. The upper mouth of the retort is sealed with a strip of cloth. The "heavenly pot" is filled with cold water. The whole process of boiling wine is to control the "heat" and change the cold water in the "heavenly pot" frequently. When the hot gas from boiling the sake lees in the iron pot rises, and when it encounters the "heavenly pot" filled with cold water, it causes the water to fall down to the "sake trough plate". "Susu" flows down the bottom of the "trough plate" to the bamboo pipe that connects the sake and enters the vat. After the sake lees in the iron pot are boiled, use low heat. The cold water in the "Heavenly Pot" should be changed frequently, and it usually takes about 3 hours to change the cold water in the "Heavenly Pot" 5 to 7 times to boil a vat of rice wine. This rice wine generally has an alcohol content of about 30 degrees. Each vat of rice wine can boil about 30 catties. This "square" rice wine is particularly fragrant and mellow. It is not a myth that after drinking this "square" wine, mortals can live ninety-nine.

Among the villagers in the vicinity of Xianren Mountain and Tianzigang, there are many elderly people who live for more than 100 years; There are countless middle-aged and elderly people in their eighties and nineties. The rice wine brewing technique taught by Bailongma to the people surnamed Zhu back then, and the people of Xianren Mountain and Tianzigang area have been passed down from generation to generation. Nowadays, the villagers near Xianren Mountain and Tianzigang, men, women and children (over 14 years old) will make "Xianfang" original ecological rice wine.
