Finally, there are no more grapes left for wine, and wine is about to be born......
Wine has always had a unique temperament, there is an ancient poem "grape wine glow-in-the-dark glass", although the whole poem does not describe wine, but also shows that wine is good!
When I think about wine, my eyes glow green, and my tongue is full of relish, but I haven't touched any wine for a long time, and my resistance has dropped too much.
Mangoes and grapes take about the same time to ripen, but if I had to choose between them, I would definitely choose both, hahaha......, okay, I'll choose grapes!
It's not that I forget my old love and don't like mango anymore, on the contrary, I like it very much, but the grape tastes very good, and being able to make wine adds a lot of points to it.
But don't get too excited, the preservation and fermentation of wine is not a simple task, and there is a lot of attention to detail from picking to sealing and preservation, so it can be troublesome.
First of all, there is the trouble with the container, you must not use pottery to hold it, let alone plastic bottles, otherwise why would all red wine have to be fermented in oak barrels!
There are obvious defects in the pottery and plastic bottles, the pottery can not be completely sealed, and if the air leaks for a long time, the final wine is estimated to be unable to be tasted, and it is possible that it will deteriorate.
The capacity of plastic bottles is limited, the parallel mouth is too small, and the material itself is not suitable, so there should be no new wine that will be stored in plastic bottles for a long time.
Unfortunately, I got myself a new job, which was to make a batch of wine containers --- oak barrels.
Of course, I am happy to think that delicious wine will soon become my drink, and who wants to be a foodie who has little resistance to any delicious food!
On the other hand, I am indeed too short of alcohol, although I was not a gentleman before, it is common to occasionally drink two glasses, and I have naturally had some unusual obsessions after being short for too long.

From my superficial understanding, there is not much difference between filling wine and filling water, which can be done in clay jars, but in terms of professional knowledge, it can only be done in oak barrels, because there are many benefits of using it to hold wine.
One is that the oak material has a certain breathability, and a small amount of air can pass through the barrel wall to cause a moderate oxidation of the wine.
Trace amounts of oxygen slowly penetrate into the barrels, which also dissolve compounds such as tannins and vanillin in the wine, resulting in richer, softer and more stable colours over a long period of time.
The second is of course beneficial to the fermentation function, otherwise what is the difference between it and the clay jar!
The third is that it can absorb the aromas of the oak barrel after being bottled, and over time the aroma contained in the oak barrel will be integrated into the wine, so that the original monotonous grape flavor will become more distinctive.
Of course, this step is a great test of the time it takes to smoke the barrel, and the resulting flavor varies depending on the degree of smoking, which can effectively indicate that the oak barrel is the first choice for wine.
Even though homebrewing is certainly casual, it's best to keep these things that are good for the taste.
Red wine is a very advanced art, and it contains a lot of extremely complex knowledge, which I really can't explain simply, not to mention that I don't know much about red wine.
I can think of using oak barrels to make wine because of my foodie attributes, because in such an environment, I really need a wine to set off the atmosphere, and using wine to drown my sorrows is the life I should live here, not live a miserable life every day!
Another reason for wanting to make oak barrels is the preciousness of the grapes, which are only one season a year, and they all end up in just over half a month.
The short period of time also means that there is almost one chance, and if the sake fails, it will have to wait another year.
This is something I can't accept, and I'd rather put some effort into making the barrels than wait another year to get the wine.
I didn't have an idea before I found out about the grapes, but once I had such a thing, I would definitely have a lot of ideas, and in the end, it would become deeper and deeper, and now I can't accept the failure of winemaking at all, and I can only succeed!

Of course, the process is not easy, the enthusiasm in the heart cannot be translated into the actual ability to act, and it is not so easy to make oak barrels if you want to drink wine and feel a little far away.
Because the winemaking process is more cumbersome, the longer it is stored, the better the taste of the wine.
At the same time, the materials used to make the barrel are still in the woods in the distance, and you have to start from the first step of cutting the tree to the last step to finish, and you don't have to think about it to know that it is not as easy as it is said!
In fact, I regret it a little now, and I regret that I reacted too late, and I increased a lot of workload in vain.
If the oak tree, the raw material of the barrel, had been cut down a few months ago, it would have been dried by now, and now I can easily carry the wood back to use, which is much easier for me.
After all, the diameter of the oak barrel must not be too small, at least more than 30 centimeters, so the diameter of the oak tree should not be too small, because my technical limitations directly affect the harshness of the material.
Therefore, it is not surprising that it is a very troublesome thing to cut down and transport a large tree with a diameter of thirty or forty centimeters......
There are quite a few oak trees on the island, I probably estimate that there are more than a hundred, but they have not been mentioned because they have not been used for it, and some have been buried.
Unfortunately, there are quite a few oak trees with a diameter of more than 30 centimeters, and I only found three, and even if I didn't notice it, it wouldn't be more than five.
The fact that a tree can grow into a large tree has to do with the environment and the soil, but the bigger reason is that the typhoon breaks a lot, or maybe more.
Actually, there is nothing to be sad about, the three trees don't look like much, but the needs that supply me are quite rich, after all, I don't plan to open a winery on the island, and I have no plans to become an alcoholic!
None of the three big trees are relatively close to the house, all of them are distributed in an area at the end of the island, the difference is only three or four hundred meters, and the closest to the house is nearly a kilometer, and it is a nightmare to cut down and move home.

The material problem was a big deal, but on the way to cut down the tree, a new idea flashed into my mind, and after thinking about it, I found it quite useful.
The rest of the trip is no longer sad before the beginning, because the transportation is no longer difficult, the most troublesome transportation problems I am ready to use a boat to solve, at this moment I want to boast that I am a genius!
Cutting down trees is a necessary process, no matter where the tree is located, it is essential, and the transportation problem is different, even if each trunk is only forty or fifty centimeters, the weight reaches 100 catties, and it is not easy to transport it home in a kilometer distance.
Not to mention that it takes one or twenty round-trips, there is no flat road near the oak tree, and it is quite uncomfortable to walk with weight!
It's much better to use a boat, you don't have to travel through the woods, you can transport at least two or three sections at a time, and it doesn't take much effort to drive the boat.
Of course, among the three trees, you can only choose the farthest one, and the one with the largest diameter, not because this tree is handsome, but because it is the closest to the sea!
About 100 meters to the sea, the tree is cut into a 50-centimeter stake and rolled to a boat parked on the shore to set sail.
On the other hand, you can park the boat near the location where you landed on the island before, and you only need to carry another 200 meters to get home, and the process is more cumbersome, but as long as it can save effort, I am willing to do it, not to mention much less effort!
The diameter of the base of this large tree is about 40 centimeters, and the thicker the container is naturally used, the better, but the trouble is that the process of cutting down and cutting is much more laborious.
It took more than half a day to cut down the tree, and it took more than two days to cut the trunk of the tree with a diameter of more than 30 centimeters into 11 sections, which is almost three days.
Each section is 50 centimeters according to the same size, no more, no less, planning in advance is very helpful in the future, and it can save a lot of things virtually.
When building a ship, I feel that every point I reduce can save a piece of effort, and every extra point will increase a burden, but when I am transporting things, I really want to build a Big Mac!

Today's ships are still too small, and even if they have sails, they don't need to work too hard, and they can't transport much.
The thickest two or three sections of the stump are more than 100 catties, and only one section can be transported plus the top section, and the size is matched, and the result is that only two sections can be transported at a time.
Although the process was relatively smooth, the 11 sections of the stumps were divided into five trips before all of them were transported home, which took one day!
Sometimes I can only think about the benefits, if I carry it home on the land by myself, these eleven sections will take at least two days to complete, and I will have to tire people half to death, but in general I still make some money.
I just hope that there will be no accidents in the results of the winemaking, and if the wine cannot be made successfully in the future, I am simply sorry for the efforts made today.
After returning home and removing the bark, the next step is to dispose of them all, in addition to the sense of urgency in my heart, there is also the problem of wood.
To treat wood in a primitive manual way, it is best to choose when the wood is still wet, because it is more brittle at this time, and it will be much more cotton after air drying, and the difficulty of handling will be different.
For me, of course, it was a low choice, and the grapes were less than two months old!
